Clear Noodles in Chili Sauce

Since I worked in a Chinese Sichuan restaurant every now and then. I enjoyed a lot Sichuan delicacies. It is well-known for its spicy flavour. 

Today I'll present a cold dish that usually is usually served first in a Sichuan meal
—— Clear Noodles in Chili Sauce (or sliced sichuan rice jello)

This dish has a long history dated from Qing Dynasty in 1800s.The founder was a  farmers, who sold this at the ferry. With its unique taste it soon spreaded all across Sichuan.  j

The ingredients include are:
jelly skin, 
chili oil
sesame oil
minced shallots, 
soy saucesaltsugar, MSG, 
and sesame.

1, Cut the jelly into thin strips

2, Mix all the seasoning  into the jelly to taste

Now it can be served, enjoy!
As you can see, it is fairly simple to make. It will generate a tasty and refreshing flavour, especially in the hot summer.
